Texas Chile

Ingredients:

  • 2 tablespoons olive oil

  • 1 large onion, finely chopped

  • Half a serrano or jalapeno, seeded and finely chopped

  • 1 pound ground bison, beef, or turkey

  • 1/3 cup REV(H)ERB Texas Chile Seasoning

  • 1 tablespoon tomato paste

  • 1 14 1/2-ounce can diced tomatoes

    1 cup strong brewed D.R. Congo coffee, or similar roast

  • 3 15-ounce cans kidney beans

Warm a Dutch oven or other large pot over medium heat. Add the oil and heat.

Add the onion and pepper and cook until tender.

Add the meat and sauté until browned.

Add REV(H)ERB Texas Chile powder and stir until the meat mixture is coated.

Add in tomato paste and stir.

Stir in the tomatoes, coffee and kidney beans.

Reduce heat to low and simmer for 1-3 hours. Salt and pepper as needed.
